Shiitake Mushrooms

Woodland mushrooms are an outward manifestation of the mostly unseen work of fungal mycelium performing their role in nutrient recycling; in the case of shiitake mushrooms, digesting decaying hardwoods.  Mushrooms are the attempt of many members of the fungal kingdom to reproduce, ultimately sending millions of spores airborne.  Forest mushrooms often appear when conditions are right…generally in the Spring and Fall. 

Shiitake mushrooms are native to Asia where they are highly prized for both their culinary uses  and medicinal properties.  Eastern medicine has long recognized the role of medicinal mushrooms. Shiitakes are recognized as playing a role in boosting our body’s natural immunity and improving our blood chemistry. Shiitakes are grown on a variety of substrates, but the highest quality shiitakes are generally grown on hardwood logs.

Shiitake growers face a few adversaries; slugs are at the top of this list. We have a few allies to keep slugs at bay…toads can enjoy up to 50 slugs each day proving themselves to be a great ally.
