Nasturtiums, native to Peru, were well established in Europe, via Spain, by the 1680’s. To Linnaeus, the giver of plant names, the broad circular leaves suggested battle shields; the flowers, helmets stained with blood. From the Latin for trophy, Tropaeum, the plant derived its name. Its peppery taste and flavor of watercress led to its other name—Indian cress. The brilliant flowers and aromatic leaves have long been used to garnish salads while the seeds were pickled and substituted for capers. All parts of the plant were used in folk remedies and legend has it that a poultice from the stems and leaves if applied to the head could prevent baldness!
